RUTH NIEMAN – FREEKEH, WILD WHEAT AND ANCIENT GRAINS Saturday 4th June

British cookbook writer Ruth Nieman joins us for the day to share her extensive knowledge of freekeh, an ancient, biblical, green grain popular in Middle Eastern and North African cuisines. Ruth will explore the history and culture of these grains and bring to life ancient recipes for modern cooks, particularly vegetarians and those interested in Middle Eastern cooking. In the morning she will be demonstrating how to cook and make bread with freekeh and in the afternoon she will join us for talk about her book Freekeh, Wild Wheat & Ancient Grains shortlisted for the prestigious André Simon Award 2021, including tasting sessions in the afternoon.
